Black Folks' Rotel

About the Recipe

Ingredients

1 lb Beef Chorizo

16 oz Velveeta

16 oz white Velveeta

8 oz shredded smoked gouda

4-8 oz shredded cheddar

1 can chipotles in adobo (juice only)

1/4 cup milk

2 cans Rotel

1 onion

Half Can of Sweet Condense Milk

Tabasco Hot Sauce *(Optional)

1-2 tbsps roasted garlic Sazon, cumin, chili powder, smoked paprika

Preparation

Preheat oven to 375°F

  1. Brown meat and onions in a skillet

  2. Drain off grease

  3. Add the seasoning and milk of choice

  4. Stir and cook until milk has evaporated

  5. In a baking dish, add all remaining ingredients.

  6. Bake for 25-30 mins or until cheese has melted. (CROCKPOT: if you’d like to use a slow cooker instead of baking, cook on low for 2 hours)

  7. Stir well

  8. Top with more green onions, cilantro, and Roma tomatoes if desired.

  9. Enjoy!

  10. Tip* if the queso is to thick add milk and stir until desired state
